Happy Monday, my friends! We are welcoming May and it’s a very special month for two reasons: We celebrate Mother’s Day [here in the Dominican Republic is celebrated on the last Sunday in May] and it’s my birthday month! This morning I found out it’s Mardi’s birthday on the 12th so make sure to congratulate her on her blog or via Twitter [btw go check out her amazing GuacaMuffins and GuacPops!]

Last week I was talking to Jen and Junia about opening a Facebook Page and guess what? I DID IT! I can now join Jen’s discussions [health & fitness related!] and make new friends 😀 Don’t be shy, go say hi to me on FB!

I added a new feature to my blog: look to the right and from now on, you can see which books I read. I finished Gary Taubes’ Why We Get Fat [great book if you like scientific data] and immediately grabbed Secrets of the Sommeliers by Rajat Parr. I’m halfway through and let me tell you it’s a fascinating read! As some of you may know by now, I am taking wine classes and if I pass the test I’ll be an AIS & WSA certified sommelier 😀 Oenology class was my favorite when I was in Culinary School and I’ve been waiting almost a year to join this program. I’m really excited and learning a LOT. If you love wine, Parr’s book is for you: every page is filled with wine wisdom, anecdotes and inspiration.

Let’s move on to this week’s Delicious Links. If you want to share something you cooked or baked, leave me your link in the comments. I really enjoy finding new blogs and making new friends. Earlier today Junia told me she found Sanjeeta through my Delicious Links 😀 Their blogs are focused on healthy, vegan recipes and today they connected via Twitter too. Don’t you love the Internet?

Since we’re starting a new month, I think its a fantastic idea to join Erin’s May Challenge: Eat a Little LESS Meat in May. She’s not asking you to become a vegetarian: consider going meatless at least once a week… It will make a difference. BTW, it’s her birthday today 😀 Happy Birthday, Erin!!

Laurie introduced me to German Pancakes. They are baked in cake pans and look absolutely delicious. I want mine crispy like the ones in the photo, please!

How do you improve mashed potatoes? Maybe a little roasted garlic? How about some cheese? Claudia shares a genius recipe: Cheesy Garlic Smashed Potatoes and Carrots. I love the addition of carrots!

Tessa says her Chocolate Mousse Tart with Bourbon Caramel Sauce can be refrigerated for 3 days, but I don’t think this beautiful tart would last that long :)

I love it! You’re supposed to detox for 21 days and I’ve already done it twice. I adopted the “elimination diet” as a lifestyle. I’m trying to eat Clean approved meals from Mon-Fri and indulge on weekends. I feel energized, sleep better and love my skin. Don’t want to lose that :) check out and :)
